That said, I'd love to try more things - particularly since I inherited a wartime recipe book that has an unbelievable amount of offal recipes (including an astonishing looking lamb's brain sauce). I just need to find a better butcher, I guess.

how is it more disgusting to eat an organ than muscle tissue?in each case you are devouring the flesh of a once-living thing. is it b/c we have all grown accustomed to the texture of chicken, but most of us are not familiar with liver etc? this concept is confusing to me
it seems to me either yr into eating animals or yr not

Well, pardon my potential ignorance, but isn't the make-up of certain organs (thalmus, kidney, liver, etc.) much different than that of muscle tissue? And, therefore, isn't the manner and amount of retention of "stuff" in those tissues different? Like, aren't the kidneys and liver the filtration devices for the body?
Not that this matters - I could crush some foie gras with a vengeance today. I'm just saying that I understand some people's hesitation in consuming glandular materials.
I also love it, because it means more for me. Woot!

I don't think it's any more disgusting. But it is a matter of privilege, being able to throw away part of the animal, so I suppose some class disgust can creep in.
What about blood? I rocked some morcilla de Burgos tonight here in Madrid.
