Vegan ice cream is pretty simple, because the creamy mouthfeel is just whipped & emulsified saturated fat. Coconut oil is about as saturated as dairy fat (and probably similarly unhealthy) and works just fine.

there are a few diff brands making coconut-milk based ice-cream-like frozen desserts now
despite having no dairy or soy they are just/almost as sugary and fatty as real ice cream so not really "healthy"

Coconut milk is one of the most fatty, caloric things on the planet. I don't know about coconut-based ice cream, but when I cook with coconut milk I always use the low-fat version and it still adds mucho calories to a meal. It's delicious though.

coconut milk is of the gods. is super rich & fatty though. a friend of mine who was crazy about it once wanted to eat just the "cream", the solids that separate out if the can sits for a while. was delicious, but we both felt kind of sick after just a bite.
