It must be pointed out that loving cottage cheese can totally depend on where you live. In NZ, cottage cheese was one of my favourite foods ever. So satisfyingly dense, so salty and creamy. Mm. Now I live in Canada, and it is inedible here. Even the full-fat variety is total bullshit. Just soupy and tasteless and disgusting.
Dairy products in general are shit here, really. Quite amazing what a different it makes when you actually allow cows out to pasture.
Cottage cheese, I miss you. You are one of the first things I get at the shops when I go home to visit.

Cottage cheese pancakes:
1 cup cottage cheese3 eggs2 tbsp melted butter1/4 cup whole wheat flour
The pancakes have to be little, like 2 inches across or so. The griddle has to be very hot or they will stick (but this is true of all pancakes.) They are delicious.
