I read this as her previously overstepping/being too modern ("well, don was divorced...") and realizing that "yes" is the correct answer, even if she found work talk exciting from a professional pov.

this is something Sopranos conscientiously did all the time but tbf it's pretty rare on TV shows, not just Mad Man. It's really hard to shoot scenes of people with their mouths full.
