mmmm cottage cheese

my cat stalks me whenever I have dairy products, but he especially goes nuts for cottage cheese. was sure the little dude was going to try to shove his head in my mouth, he was smelling my breath so intently

It feels like cottage cheese is in decline. Like, it's heyday has come and gone.

I thought it had a bit of a hipster resurgence a couple years ago. At any rate it's delicious

Cottage cheese pancakes:

1 cup cottage cheese
3 eggs
2 tbsp melted butter
1/4 cup whole wheat flour

The pancakes have to be little, like 2 inches across or so. The griddle has to be very hot or they will stick (but this is true of all pancakes.) They are delicious.

the cottage cheese pancake recipe sounds odd but interesting and much healthier than regular pancakes

everyone is suspicious of them until they try them, and then they are blown away by how good they are
