Key to a good julep is doing the simple syrup right: cook it up, add mint leaves while it's cooling, and refrigerate it overnight. Makes all the difference.

Yeah, you can do that, but some form of mint infusion is really preferable -- it gives you a truer, more pervasive mintiness. There are various ways to do it. This recipe recommends infusing the bourbon itself, which I suppose could work, but you'd better be right about how much bourbon you need. I think infusing the syrup (as recommended here, in a variant on my suggestion above) gives you more flexibility. By the time the leaves have steeped overnight, the syrup is deliciously tangy. Mmmm. (That said, I can only drink about two of these things...)

i started training with a mint julep at milk & honey last night. somewhat shockingly, this is the one cocktail at which they do not excel. it was too sugary and had way too much crushed ice, leading to an unpleasant wateriness. more interesting was the bee's kiss (light rum and honey stirred with a bit of fresh whipped cream), which gently eased the pain of julep disappointment.

i think the london system is more complicated than the ny one. with the latter, you just call and sound member-ish and reserve a table and that's it. the big problem, really, is cash. perfection does not come cheaply.

For the thread:

3 parts to a good mint julep -

(1) High-proof bourbon, like Wild Turkey, Bulliet, or Booker's, although Booker's really isn't mixin' whiskey
(2) CRUSHED ice
(3) LOTS of mint

Make a simple syrup - 50% water, 50% sugar. Bring to a simmer, while stirring. Allow to reduce a little. Turn off the burner. Let stand

In the bottom of an empty rocks glass, or, if you have the means, a pewter julip cup, take approx 10-15 leaves of mint, and add 2 tbsps of syrup. Muddle.

Fill to top of glass with crushed ice.

Fill with bourbon.

Add sprig of mint with a good number of leaves still on it to the glass. This is VERY important, as the julip is a cocktail which relies heavily on the smell of the mint.

Enjoy, but don't plan on driving anywhere.

I was served a fantastic one a couple weeks ago with a big bunch of mint stuck into the top and a short straw coming put through the middle so that I pretty much had my nose in the mint every time I took a sip - it was great!
