Mandatory tips are dumb
Even on smaller, 8-person tables, you'll have others but if you get stiffed on a $100 tab, at most restaurants in the US the serving is losing ~$5-6 for the privilege of waiting on those people. I think in the early '00s I was tipping out 3.5% to the general staff plus 5% of bar sales to service bar.

Parties of 6 or more seem to get autotipped everywhere I go at home, also in UK (where it's an automatic service charge).
Strangely, during the time I waited/bussed tables (and also during the 15 years my sister, who sometimes says racist things, was a waitress) I never once heard of this concept of black (or church) people being stingy tippers. So until there were internet messageboards, I did not know this was a thing.
Gawker also covering itself in glory with stereotypey/racisty commenters (though I grant some of them may have only started posting to Gawk on the thread in question).

i cant really speak to idolator, for fleshbot (and to some extent wonkette) the big issue was ad sales -- hard to sell ads around politics or porn. for fleshbot in particular, the only ads you can sell are porn ads, so its difficult to do strong independent journalism and still make a living, plus you cant sell inventory across the sites in your network. plus there was a point where gawker was doing some pretty good porn-industry journalism and i think it became clear that... whats the point of having the site if flagship is doing the journalism on its niche

I worked at headquarters for a buffet chain that re-classed many of their employees as "servers" so they could legally reduce their pay below minimum wage.
Can you imagine working a minimum wage job and getting the memo that your wage was being cut?
How did they make them servers? In addition to their standard tasks like restocking the buffet and cleaning tables, they were made to pour coffee, offer deserts, and do a few other server tasks, and had their wages cut for it.
A buffet chain! Have you ever seen someone tip at a buffet chain?
