Real yams are not widely cultivated outside of Polynesia. All the produce labeled "yams" in grocery stores in the USA are variants of sweet potatoes. The growers petitioned the USDA to call some sweet potato varieties "yams" because they sounded more exotic and sold better.

There are different kinds of yam - the Polynesian one is Purple Yam (which is the one eaten in the West Indies and US iirc). The one eaten in Africa and Europe is White Yam.
― Wag1 Shree Rajneesh (ShariVari), Friday, 25 August 2017 07:39 (six years ago) link
They are both "real yams" though, and African yams are produced in much greater quantities than Polynesian yams (according to Wikipedia anyway)
Americans and NZers (and apparently Australians) also call sweet potatoes "yams" which is what Trayce was talking about I guess.
The NZ "yam" sweet potato is called "oca" though - there's an option in the poll "oka" which doesn't seem to exist, so maybe that's an alternate spelling, and so Trayce's point still stands about sweet potato appearing multiple times.

honestly this should have been a ballot poll. potato will reign always in a pick-one poll because potato goes well with practically anything and if you've ever been poor probably you've gone through whole seasons where in the absence of potatoes it would've been super hard times. potato would probably not win a ballot poll because it would be ranked people's third or fourth favorite vegetable but if you ask people to just pick one vegetable then many of them are going to do the reasonable thing and say "yes, asparagus is delicious, and guess what I can't live on for weeks at a time if it comes down to it, asparagus, I'm voting potato, long life to the anti-potato crew but be real"

the absolute pea
what ilx needs more than ever is certainty. potatoes have secured the largest number of votes in this entirely fair and democratic poll, and despite the devisive rhetoric we have seen from some quarters in recent days, it is clear that going forward ilx must accept potatoes as the best vegetable
also, fuck mushy peas
thank you

mushy peas would've stood more of a chance if they'd just joined with their snow pea and mangetout comrades on a pea unity ticket. they all lost out through being divided, no-one likes split peas.

I made some Bombay style potatoes yesterday, they were boiled in their skins, fried in butter with mustard seeds/cumin seeds, garlic, ginger, onions, tomatoes + extra hot Caribbean curry powder + loads of spices etc. Damn, it was so nice I'm doing it again today.

I can't remember what recipe I started with. But I boil some reasonable sized potatoes in their skins for half an hour. Cube them after they have cooled. Fry the Mustard seeds/Cumin seeds in massive slab of butter, then add potatoes, onions and spices. Sorry I'm no good at this! I bet Suzy has a killer recipe.

it's a collaborative effort, as the garlic, onions and tomatoes shrink and dissipate into the potatoes - they become an important part of it, but not necessarily the star attraction!

I suppose it was an attempt. Also add Turmeric, Cayenne Pepper and some ground Cumin. Is what I usually do. And I find going irresponsibly apeshit with the butter makes it much unhealthier and tastier.

calzino is right - that recipe is specific to potatoes - you could try it with another starchy veg like yuca or something but only the intrepid potato will meet the acid of the tomato & the sting of the onion head-on, laughing, its face to the wind announcing - I am the potato - I have the gumption to weather storms in which my brethren vegetables wilt - fuck the haters, eat some taters

potato will reign always in a pick-one poll because potato goes well with practically anything and if you've ever been poor probably you've gone through whole seasons where in the absence of potatoes it would've been super hard times
i don't know, during my shitty college days when i was learning how to feed myself i pretty much lived on quinoa and lentils, and even though i appreciate those foods and will gladly eat them on occasion to this day, i'm not going to pick them in any poll because 64% of my body was made out of lentils at some point and i've had enough for a lifetime. i imagine those who went the potato route during financial hardships might feel the same way!
i guess this comes down to whether or not we were voting for the one vegetable that we'd want to pick as a practical matter, day-in and day-out, or if we were voting for the vegetable that stands out as especially delicious compared to others for a single meal. like the great ILX reality cooking series, and the special food group for one episode is "vegetable", and you have to choose something from the ingredients in the poll to wow the judges (who, in a cruel twist, is just guy fieri). in that case, even guy fieri is going to be disappointed in "potato" unless you dumb bbq sauce all over it or something
― Karl Malone, Friday, 25 August 2017 14:56 (six years ago) link

Putting one clove of garlic into something, surely makes no discernible difference.
Depends on how you prep it. One clove grated with a fine grater or microplane = the garlic punch of 5-6 cloves sliced/minced.
― May contain peanuts, tree nuts, soy, wheat, pits or pit fragments. (WilliamC), Friday, 25 August 2017 15:51 (six years ago) link
I use a garlic press usually, which probably has the same effect as a microplane, and have never noticed this effect! I'm down with Maunika Gowardhan when it comes to garlic, don't be shy, 6 or 7 cloves will do.

Garlic Poll: More or less, and is William C's bad garlic science a 1st world construct. Where do you stand on this very important question, JCLC?
― calzino, Friday, 25 August 2017 16:23 (six years ago) link
man that is a huge question. for several years I ate no onions or garlic at all -- as you might imagine, this has resulted in a very intense love for both. still I do think there are places where garlic can be overdone - there's a right quantity in a sauce, unless it's specifically a Garlic Sauce.
but like if it's a Thai dish like Eggs with Crispy Garlic, basically quadruple the amount in the recipe, you will not say "oh no there's too much of this incredible crispy garlic." If you're roasting vegetables, nobody's going to see "you've ruined this by roasting too many garlic cloves to mushy, melting, caramelized brown perfection."
I missed William C's postulate somebody refresh me
