I'm reheating a baked potato, it's not the same but there's another one in the fridge if you really want it? I was thinking of using cheese and bacon on it.

I would try a variant on what I often do with sweet potatoes:

Cut into long pieces.
Rub with a seasoning mixture.
Roast in oven for 20 minutes.
Eat with fingers.

My seasoning mixture is typically: olive oil, minced garlic, kosher salt, and ground cayenne. But I think currying spices added to this would be quite terrific.

just make a sweet potato curry with a light, tomato-based sauce (not creamy). i've actually been served this before and it's wonderful.

Adapted from Madhur Jaffrey (and actually Sri Lankan, but don't tell anyone):

Peel 2 very large sweet potatoes and cut into chunky pieces. Boil with 1/4 tsp turmeric for 5-6 minutes, until they're tender but still firm. Drain.

Put 5 tbsp peanut oil in a large frying pan and set over medium-high heat. Then put in 3 whole dried hot red chiles (broken in halves), and stir once. Then put in 2 whole cardamom pods and a cinnamon stick; stir a couple more times. Put in 20 fresh curry leaves. Stir once. Put in 3 good-sized onions cut into very fine half rings. Stir and cook until they're lightly browned. Add the sweet potatoes; stir and fry for 5 minutes. Put in a couple of teaspoons of crushed dried red chiles, a bit more than a teaspoon of salt, and a tablespoon and a half of lime juice. Stir and cook until the sweet potatoes are tender enough for you.
