potato will reign always in a pick-one poll because potato goes well with practically anything and if you've ever been poor probably you've gone through whole seasons where in the absence of potatoes it would've been super hard times

i don't know, during my shitty college days when i was learning how to feed myself i pretty much lived on quinoa and lentils, and even though i appreciate those foods and will gladly eat them on occasion to this day, i'm not going to pick them in any poll because 64% of my body was made out of lentils at some point and i've had enough for a lifetime. i imagine those who went the potato route during financial hardships might feel the same way!

i guess this comes down to whether or not we were voting for the one vegetable that we'd want to pick as a practical matter, day-in and day-out, or if we were voting for the vegetable that stands out as especially delicious compared to others for a single meal. like the great ILX reality cooking series, and the special food group for one episode is "vegetable", and you have to choose something from the ingredients in the poll to wow the judges (who, in a cruel twist, is just guy fieri). in that case, even guy fieri is going to be disappointed in "potato" unless you dumb bbq sauce all over it or something

sorry JMM, my recipe was a bit of a fudge, and jclc's honeyed classicism puts me to shame! I'd put about of inch cube of grated ginger and 6 or 7 cloves of garlic in there, is something I should have added.

Putting one clove of garlic into something, surely makes no discernible difference.

Depends on how you prep it. One clove grated with a fine grater or microplane = the garlic punch of 5-6 cloves sliced/minced.

I use a garlic press usually, which probably has the same effect as a microplane, and have never noticed this effect! I'm down with Maunika Gowardhan when it comes to garlic, don't be shy, 6 or 7 cloves will do.

man that is a huge question. for several years I ate no onions or garlic at all -- as you might imagine, this has resulted in a very intense love for both. still I do think there are places where garlic can be overdone - there's a right quantity in a sauce, unless it's specifically a Garlic Sauce.

but like if it's a Thai dish like Eggs with Crispy Garlic, basically quadruple the amount in the recipe, you will not say "oh no there's too much of this incredible crispy garlic." If you're roasting vegetables, nobody's going to see "you've ruined this by roasting too many garlic cloves to mushy, melting, caramelized brown perfection."

When my food-obsessive Israeli father-in-law got into the low-carb diet, he once went on a deathly serious rant about potatoes, to the effect of "The potato is a KILLER! It is a carb BOMB! NEVER eat potatoes! Never!" The way he pronounced killer "KEE-lehr" still rings in my ears.
