traditional english chips are bizarre to my north american palate. they appear to be big hunks of boiled potato that have been dipped in oil only long enough to seal the outside.

mind you they're better (fresher, healthier, more real) than "french fries" (the skinny, salty, little bastards) that they lovingly Re-Fry for you at the kebab shop after (also lovingly) shovelling them out of a cardboard box that used to live in the freezer.

Ah how I remember trying to make our own chips. Shallow frying for hours did nothing, a parboiling was just ridiculous, thank god for being taken pity upon by someone with a bag of frozen fry chips else would have been absolutely doomed.

I haven't had chipshopchips for ages - the last ones were probably CHICKEN CHIPS which as any fule kno are there only to soak up the lovely CHICKUN JUICES.

I do not think I am going to eat anything hot and salty with my fingers for a while due to having BITTEN MOST OF MY THUMB OFF in stress this morning grrr.

I finally worked out almost perfect skin on fries. Leave in water for a few hours and dry them with a kitchen towel or by any means necc. Then cook in oil at 130 degrees celsius for 9-10 minutes (adjust to size). Leave them to cool down for time - longer the better. Then deep fry them for 2-3 minutes at 190 degrees celcius. The magic of fuckin' chips not made in an industrial kitchen laid bare!
