No, there's also my friend Josh Burley, who is very down on them. Given that his mom is Mexican, no doubt he has strong reasons for his dislike. :-)

Ian's Quesadilla Recipe:

Defrost a chicken brest, cover it in cayenne pepper, onion powder and garlic powder, and grill it.

While grilling, grate monterey jack and cheddar cheeses. Sprinkle them liberally on a large flour tortilla. Chop onions if you desire and also put those on. Spice for added flavor. When chicken is done, hack into small pieces and evenly lay them into the tortilla bed.

Get a large skillet and pour some oil into it. Heat it up. Fry your quesadilla on medium-low heat for a few minutes aside, depending on how crispy you want it. Remove from oil and blot with paper towels. Cut into quarters with pizza slicer. Serve with guacamole (home made, preferably) and sour cream.
