I'm writing an article about two local chocolatiers right now and man, am I loving it right now. last night I had NORI chocolate (yes! the seaweed!), truffle oil chocolate, tobacco chocolate (!), hot pepper chocolate and lots of other delights. anyway, i'm not trying to gloat about it or anything, but I was wondering what your favourite chocolate is.

also, I'm not trying to get you to do my homework or anything, I've already selected the subjects for my article, I'm just in a chocolatey mood right now.

But my all time fave is still Lindt 85% Cocoa, for the hardcore serotonin addict.

MMMmm praline. In the supermarket the other day they were selling koko. Which seems to be raw cocoa bean extract, a waxy black-brown cone - I was going to buy it, but then I thought it might kill me.

There's an excellent chocolatier here in Brooklyn-- Jacques Torres, down on Water st. in DUMBO--they make a little dark pastille flavoured with earl grey tea that's very subtle and delicious. My fave-rave of all time, though, is the Ritter Sport marzipan bar. The bitter chocolate is a perfect counterpoint to the marzipan, and the two together have a very pleasing texture.

I got gold, frankincense and myrrh flavoured chocolate for Xmas (really) but it just tasted a bit orangey. Nice enough, and with real gold leaf stuck on it.

Trader Joe's usually has varieties of death chocolate that might as well be molded cocoa beans (I approve, of course) -- the best bars seem to be various imported European ones sold as impulse buy items at the cash registers. THEY KNOW ME SO WELL.

you know what's great? I forget the name but here you can get these fancy chocolate bars that come in plastic tobacco pouch-like things. they're so good. chocolate with actual mint leaves! earl grey! pink peppercorn! wowee

Trader Joe's has a newish lot of varietal chocolates, very interesting to the serious taster.

here's some stuff I learned about chocolates today.

according to my friend the pastry chef/dessert maker, the best chocolates should have a shell so thin that it just contains the ganache within. that is the sign of an expert chocolatier.

Homemade Caramilk bars! Slutsky, you're to turn in your press card if you didn't ask them how they get the caramel into the Caramilk bar.
Any thoughts on new chocolate bars--ie ones that've been introduced in your lifetime, and their space with the candy bars of the canon? The last new and really unique chocolate bar I remember liking was the choclair--which, needless to say, deserves double kudos for being both a tasty chocolate bar and the namesake of a TOTALLY AWESOME rapper.

I still find Cadbury's dairy milk (i.e. what some of you wouldn't actually allow to be called "chocolate") gives me that feeling of total chocolatey satisfaction whenever I have a piece.

funny how you mention new chocolate bars--remember that one, "sidekick," that was marketed as like the executive/office worker chocolate bar? a colleague of mine just expressed a great deal of enthusiasm for them yesterday, esp in a stoned context.

choclair I was never that nuts about, it was always a better rapper name than chocolate bar.

& I do love cadbury! fruit & nut is one of my favourite bars, goofy name notwithstanding!

Valrhona's "Le Lacte" milk chocolate has 40% cocoa solids (twice the average) and is pretty great. Not too sugary at all, which is my usual complaint about milk chocolate.

These are my favorite white "chocolate" treats. Squeeze the skull and red goo splurts out:

Well technically it isn't chocolate (because it doesn't contain cacao). I used to eat a quarter kilo every day! Then I stopped and lost four kilos.
A local chocolatier here makes flower chocolates! (With real violets) They're absolutely yummy.

For two decades now, every time a colleague has gone to the states and come back with some american chocolate for the office - usually hershey's - I've thought 'was it really as bad as I remember from last time? surely not', tried some, and reaffirmed that yes american chocolate is truly vile, and does indeed taste of vomit.
