I swear this has been happening to me. Color seems to be returning to some of my gray hair, and it seems to correspond to a dietary change. I hit upon a breakfast I have been eating just about every day now: cream of buckwheat (about 1/3 c. before it's cooked) with a Tbs. of virgin coconut oil. After looking around online, buckwheat does seem to have a reputation for benefiting hair health (and to some extent coconut oil does, though not in a way that I would expect to change the color).
Mostly I started eating this breakfast because I was tired of scrambling for muffins and the like, and I wanted something reliably easy to digest.
Either that or it's the chimichangas.

I've heard of people reversing gray hair with diet changes. Some claim it's related to mineral deficiencies, and coconut oil aids significantly in mineral absorption. Cool!

Here's the formula I've arrvied at: 1/3 c. of buckwheat (specifically for cream of buckwheat, which means its chopped finer than kasha), 1 1/2 c. of water, 1 Tbs. coconut oil, a pinch of salt. Bring water a coconut oil to a boil and add salt as it comes to a boil (or just before). Add buckwheat and a half tsp. of vanilla extract (if you like). Turn heat down to low simmer. Cook until its a texture similar to oat meal and it partly clings to a spoon if you lift some up over the pot. That's how I like it anyway. Then I add about 1 Tbs. of maple syrup. Actually, I might have gotten some of the idea for this from an old ILE post.
Yeah, if coconut oil enhances mineral absorption and buckwheat has an unusual nutritional profile (which it does, with rutin in it, though that's not a mineral), it really could be that. It also makes me wonder if I have a mild, undetected wheat intolerance. One of these days I should really do a trial run of going wheat-free for a few months, but that's such a pain in the ass.
