i have a very large marrow...

and i really don't know what to do with it! i was thinking about stuffing it with stewed oxtail, shallots and butter beans, then baking it, but i'm not 100 per cent sold on this idea. is anyone experienced with marrows? can you help?

I like stuffed marrow. I usually do them with minced beef, onions, chopped mushrooms, rice and some grated cheese, but your oxtail and butter bean version sounds delicious.

cj, i've never cooked one, so does the rice soak up the water from the marrow. this is the only thing that worries me about my idea, that it might get too wet

I dice the onions and fry them gently until transparent and soft, add the minced beef to the pan with the chopped mushrooms and cook until the meat is brown. Drain off the fat.

Pre-cook the rice, drain and add to the meat mixture, Season to taste (I sometimes make a little bit of thick gravy to bind it all together, or sometimes just use a squirt of tomato paste).

Either slice the marrow into thick rings, or slice the whole thing lengthways. Remove the seeds and any tough fibres. I use a vegetable peeler to thinly pare off the outer tough skin, too. Pile the meat filling into it, sprinkle with grated strong cheddar cheese and some freshly ground black pepper, then wrap tightly in foil and bake in the oven for about half an hour.

Serve with lovely creamy mashed potato. Yum.

i was going to take the outer skin off and do like a cheese crust on it. i'm gonna go for the oxtail and butter bean version and see how it goes. definitely going to do the slicing lengthways thing coz i want to serve people a WHOLE marrow!
