because i seem to have weird digestive and respiratory problems after i eat, particularly after i eat grains...

My sister has it, it got to the point she had digestive problems every time she ate. She was diagnosed through an allergy test, 'got off' wheat and she says the difference is night and day. I'm a believer.

An old colleague of mine had celiac err, disease? Is it a disease, syndrom, condition? Anyway, the digestion problems had her worried but it got serious when, as a health-conscious, yoga-doing, organic-foods cooking vegetarian, she turned out to be sick from malnourishment...because her body was ejecting the glutinous foods so fast it didn't have time to digest anything. Bad news.

it's celiac disease/celiac sprue. found mostly in individuals of northern european extraction. it's an autoimmune condition where the presence of wheat gliadins (proteins that aren't found just in wheat, but in a variety of related cereal grains as well) causes the body to attack the intestinal mucosa leading to poor absorption of foods and malnutrition. no treatment other than strict avoidance of those particular grains, which can be difficult unless you shop at specialty stores.

if you're concerned, you should probably get specifically tested. it runs in families, too, so you should consider if there's any history of it in yours.

My Mum has IBS and my sister's coeliac. I'm pretty sure I'm a bit intolerant but it's not bad enough to stop me eating bread. I do love my carbs.

when I was a kid I was told I had wheat allergies but never thought much of it. As I got older it got worse. One day I had a delicious plate of cracked wheat from a morroccan resteraunt and all night I felt terrible. Still didn't make the connection. Later a girl I worked with was reading a book about how common allergies are to wheat, soy, nuts, dairy etc. Around that time I was working out a lot but not losing any weight. For 2 months I stopped eating wheat and dairy and felt amazing and healthy for the first time in years. Then I started eating a little bit of wheat and dairy. Now I totally ignore it, eat tons of wheat and dairy, and feel terrible all the time. I really should stop.

One of the major solutions is Spelt, though some people who have problems with the glutens in wheat will also have problems with Spelt, for others, Spelt is the solution. There are a few very common brands that make spelt bread of varying qualities, I prefer Rudy's Organic. It just taste like a good whole wheat bread, and annoyingly kinda falls apart a bit, but does the job for sandwhiches, toast, eat with hummus etc. Also, rice crackers and other rice products. When I was really good w/ the non-wheat diet I ate a lot of rice dishes, a lot of asian food, and some of your noodle cravings can be taken care of with Thai and chinese dishes that use rice noodles instead of wheat/flour noodles. There's a brand called vitaspelt or something that make spelt pasta, some of it's a bit nutty, but one of their products, I swear I couldn't tell, spelt spheghetti with meat sauce, you really don't notice the difference. At least I didn't.

I have heard that the stuff they use to glue the rice together to make crackers is pretty bad for people with irritable insides and at the very least it makes you farty.

I think I'm a touch intolerant, it got worse when I was pregnant. White bread is the only thing that gives me heartburn, and I have trouble gaining weight (except when I was pregnant, hmm). Avoiding wheat is a bitch.

my prob is that after almost every meal (it seems like the ones w/grains, but i have to monitor it a little longer to be sure) -- about an hour or two after to be precise -- i get all mucus-y and my throat swells up and i have typical allergy-type reaction: congested nose, hot flashes, itchy skin, etc. hm..

Might also be dairy - I know lactose intolerant people have that kind of reaction.

I find it totally easy to avoid food groups if the deterrent is pain. I've had much less joint pain after being on an anti-inflammatory diet since March. No sugar, nightshades, red meat or grains except for breakfast oatmeal. Sounds severe, but the payoff is great. Plus look at all the things that are allowed—cheese, wine, fruit, eggs, chicken, coffee, fish—lotsa good stuff.

i think i might have this. i try to mix in other grains and eat less wheat. there are lots of other grains about there, but its hard to get into the habit of eating barley and buckwheat and whatnot. everything is made out of corn and wheat! apparently people w/gluten intolerance also often have problems w/dairy (i know dairy makes me sick). i think the more processed wheat is supposed to be worse too.

Wheat insurance would be useful for the Australian Wheat Board who are in a pickle over the UN/Iraqi corruption scandal. I would voluntarily avoid wheat for life if the Australian government goes down over this.

Health food and organic stores can be really good for wheat intolerant and lactose intolerant people. You'd be amazed at how much food you can still eat, but it can be quite expensive, which is the main downside.

Certainly the case if you actually have celiac disease, because the intestinal problems cause lactose intolerance also apparently.
