I once saw a Chippy Chinese style Curry sauce youtube masterclass. You basically just deepfry a load of onions, apples, garlic, ginger and then add industrial amounts of oil, flour, msg, madras curry powder to the filtered out gack. The process was so repulsive it put me off having it, until the next time I had it and loved it of course!

Cooking with wine is pretty sophis where I come from. Although keep in mind that up until the late 80s 'curry' in this area meant minced beef with a bit of curry powder and sultanas. Maybe put a bit of turmeric in with the rice to be fancy.
