I have used Audacity for this purpose.

It's good because you can chop out the bits you don't want, fiddle with volume settings and so on and convert to mp3 or whatever. On the negative side there's a learning curve and it's a bit fiddly.

I use Total Recorder - great Windows app that can grab whatever is coming out of the soundcard, with lots of little features.
