What is the one song out there that even pretty intense music fans might not know exists, but should?

I'd vote for The Everlasting First, by Love.

Just as good as anything on Forever Changes, plus a killer, killer guitar solo by Jimi Hendrix. Holy mackerel, that song is great.

Rank & File's "Sound of the Rain" - the most gorgeous, jangly pop song on the planet.
And their "Long Gone Dead" is not far behind it.

Eyeless in Gaza's "Dear Light" -- it's on their 1995 album Bitter Apples and so it's overlooked because it's not first-phase EiG, but goddamn what a tune!

The original, yeah. He was trying to shop it to Judy Collins but ended up recording it himself. I think Joni's own version tho is out-of-this-world.
