I just got new surround sound speakers. What should I play first?

Dropped 120 bucks at Best Buy today for new Altec Lansing surround sound computer speakers, which really isn't that insane or expensive at all. Someday I'll have enough money for a for real system, but for now, this one is pretty decent.

Anyway, this is the first time I've had surround sound. What should I play first?

I'd start with "Flight Of The Behemoth". But some would say "Black One" as its a bit easier to get into (but if you dont like black metal vocals then avoid).

Why would you want to listen to something recorded and mixed in and for stereo in surround?

Maybe this is not the right place to ask, but: I have a 5.1 system, but almost all my music is designed for stereo (very few 5.1 remixes). What's the best way to get optimal sound without the receiver still trying to force stuff through the extra speakers? I've got a mono setting and various "mode" settings (i.e. concert hall, rock concert, etc.) but I don't like the way these mess with the mix. Oddly there's not a straight "stereo" mode. What works for y'all? Any practical advice?
