It's not shit, we make the best frigging fries on earth. I remember being in Houston, in the late eighties, asking for some fries with mayonaise. The woman behind the counter looked at me like I was some alien. Was I sure I wanted mayo with the fries. No, I'll sleep a night over it and get back to you. Yes, of course.
We also put fries between a roll. Never tried it though.

hahaha! it's just the mayo part i don't like. i dig the belgian fryolator action. oh so yummy. i've never been big on mayo. which, in and of iteself, is purty un-amurrrrrikkkan. cuz amurikkkans looooove mayo. i'm not big on bluuuuuuu cheese dippin's either.

(i don't mind a little special sauce every now and again on meee burger. or some horsey sauce!!! and i like potato and/or egg and/or chicken salad with mayo. even waldorf salads with raisins!!!!! b ut not chutney mayo!!!) i make the BEST potato salad on earth. I kid you not!!!! people who don't even care about potato salad LOVE LOVE LOVE it.

For an out-of-this-world dish, fry potatoes in goose fat and season with dried rosemary. A little goose fat goes a long way. Dried rosemary gives off the most amazing aroma—one that fills the whole house—so you might want to double the recipe.
2 1/2 lbs. Yukon gold potatoes
2-4 Tbsp. goose fat
1-2 Tbsp. dried rosemary
Salt to taste
Heat the goose fat in thick-bottomed pan, such as cast iron or stainless steel frying pan. When the goose fat is hot, add the potatoes. Sprinkle the dried rosemary on top of the potatoes. Let fry without turning until the first side is golden brown (you can test a few by peeking under them). If needed, be ready to add more goose fat a little at a time. Turn several times until the potatoes are done.
