i don't like chili/cheese fries. i hate wet/soggy potatoes. see also vinegar on fries. why soak them?

a little bit of sweet chili sauce is good, though.

There's this place in like Menifee Co. KY that I used to always go to with my dad on the way back from camping trips that proudly sold a "BUCKET O FRIES" for $1.99. They were those skinny little shoestring fries that you can only eat by the thousand.

nickalicious (nickalicious), Friday, 29 July 2005 12:21 (twenty years ago)

4. nonna that belgian shit with the mayonaise cuz i'm proud to be an americuntzzzzzzzz (

It's not shit, we make the best frigging fries on earth. I remember being in Houston, in the late eighties, asking for some fries with mayonaise. The woman behind the counter looked at me like I was some alien. Was I sure I wanted mayo with the fries. No, I'll sleep a night over it and get back to you. Yes, of course.

We also put fries between a roll. Never tried it though.

Carne asada fries seem to have become a big taco shop favorite here in San Diego. Seems like a scary death meal - styrofoam meal box full of fries and carne asada and I think they put cheese and maybe sour cream on it.

I used to live in India and at my school you could order french fries for lunch but the Indian ketchup was gross, it was like way sweeter than US ketchup, so we would all eat our fries with mustard instead. Also, no beef hamburgers, just buffalo burgers. CULTURE SHOCKA!

n/a (Nick A.), Friday, 29 July 2005 15:20 (twenty years ago)

teh britishes never had okra before.

hstencil (hstencil), Friday, 29 July 2005 15:21 (twenty years ago)

i think they add a pinch of allspice or something to the gravy, it's got that hint o' cinnamon!

s1ocki (slutsky), Saturday, 30 July 2005 04:55 (twenty years ago)

in quebec deps (like delis) the cheese curds are always next to the cash register, unrefrigerated in these terrible greasy plastic bags

s1ocki (slutsky), Saturday, 30 July 2005 04:56 (twenty years ago)

i think they add a pinch of allspice or something to the gravy, it's got that hint o' cinnamon!

could it be nutmeg? nutmeg is cheese's secret best friend.

cost fucked madonna (Jody Beth Rosen), Saturday, 30 July 2005 05:00 (twenty years ago)

yeah i was thinking maybe nutmeg but i vetoed that at the last second!! you're probably right though!

For an out-of-this-world dish, fry potatoes in goose fat and season with dried rosemary. A little goose fat goes a long way. Dried rosemary gives off the most amazing aroma—one that fills the whole house—so you might want to double the recipe.

2 1/2 lbs. Yukon gold potatoes

2-4 Tbsp. goose fat

1-2 Tbsp. dried rosemary

Salt to taste

Heat the goose fat in thick-bottomed pan, such as cast iron or stainless steel frying pan. When the goose fat is hot, add the potatoes. Sprinkle the dried rosemary on top of the potatoes. Let fry without turning until the first side is golden brown (you can test a few by peeking under them). If needed, be ready to add more goose fat a little at a time. Turn several times until the potatoes are done.
