tehresa, Saturday, 19 January 2008 07:31 (sixteen years ago) link

one month passes...

I am about to roast some beets.

Rock Hardy, Tuesday, 11 March 2008 18:59 (sixteen years ago) link

I roasted beets (for the first time) (in foil) a few days ago! They were awes.

Sliced beets+goat cheese+walnut+vinaigrette.

G00blar, Wednesday, 12 March 2008 09:57 (sixteen years ago) link

i just made a salad inspired/similar to this:http://chocolateandzucchini.com/archives/2008/03/grated_carrots_and_beets.php#more

i love raw beets at least as much as cooked. juiced, with apples, carrots, celery, and ginger is a magical elixir

Does anyone know if shredded beets do ok when frozen? If so, about how long do they do ok this way?

I have been eating a lot of beets this summer and want to do so once the bounty ends, which is pretty soon I reckon.

Euler, Wednesday, 9 July 2008 20:37 (fifteen years ago) link

Everything I'm finding online recommends blanching them before freezing (they keep longer that way, 10-12 months @ 0 deg F). So you could shred, blanch for 3-5 minutes in boiling water, drain, pack into containers and freeze.

Jaq, Wednesday, 9 July 2008 20:47 (fifteen years ago) link

Ok, that's not too hard to do. Thanks!

Euler, Wednesday, 9 July 2008 20:57 (fifteen years ago) link

I'm pretty sure I never posted my pictures of the BEET RISOTTO I made:

two years pass...

Bumpin my beets thread to say that I bought some GORGEOUS golden beets. They look like a beautiful rainbow and I can't wait to eat them.

Ralpharina (La Lechera), Friday, 8 April 2011 23:59 (thirteen years ago) link

Mmm... I need to make another beet risotto. I made one several months ago with orange and dill, and it was really lovely. Plus, it looks like a grisly crime scene in a bowl.

lindseykai, Tuesday, 12 April 2011 23:56 (thirteen years ago) link

i add beets to my vegetable burrito mix. makes everything hot pink and they go perfect w/ jalapeños

Secrets will not Block Justice (harbl), Wednesday, 13 April 2011 00:13 (thirteen years ago) link

So far I have eaten them in salads: one w/ pea shoots, avocado, onion, orange muscat/walnut oil/sriracha dressing over romaine
Other was to add more substance to leftover green papaya salad leftover from last night (added fennel too!)

Both were really good, but I kind of keep expecting them to taste like a mango but then they don't.

Leftover leftover

housedress? maxidress! (La Lechera), Wednesday, 13 April 2011 02:45 (thirteen years ago) link

that sounds insane

or at least beets + sriracha is blowing my mind.

arby's, Wednesday, 13 April 2011 02:47 (thirteen years ago) link

It was a tasty and surprisingly subtle combo! Sweet, tangy, spicy.

housedress? maxidress! (La Lechera), Wednesday, 13 April 2011 02:49 (thirteen years ago) link

tbf i think sriracha has been good on everything i've ever put it on

arby's, Wednesday, 13 April 2011 02:49 (thirteen years ago) link

For the longest time I thought I hated beets because I didn't realize I had only eaten them pickled (my mother was one of those Year Without a Summer gardeners who would grow bushels of things but then immediately preserve or freeze them). I don't know what made me buy them and cook them - they were probably on sale, because this was in grad school - but it was a total revelation to have them boiled, with fried catfish and "tartar sauce" (just pickled garlic with mayo/sour cream).

three months pass...

I made a salad tonight with three different kinds of beets, so I have dubbed it the SEVERE BEETING salad.

Not the best pic, but you can see the beets:

* golden
* candy striped
* regular

I also added orange bell peppers and it was a psychedelic rainbow salad of my dreams.

I braised some with a bunch of yellow and purple potatoes, and unfortunately they all kinda bled together :-/

my love for beets has not waned in 6+ years
last night i made a flatbread/pizza thing with

roasted beets
shredded chicken
spinach
gorgonzola
pine nuts
garlic/oo

and it was delicious. just a bunch of stuff from the fridge, but it sat well together.
i feel like at this point it's safe to say that beets and i are bffs 4 life

sorry! i could easily not put chicken on it for your sake. it would taste just as good, it just wouldn't have chicken on it.

passion it person (La Lechera), Sunday, 2 December 2012 20:50 (eleven years ago) link

I just roasted 4 medium-size beets, two red and two golden! I have long had a severe beet aversion related to a childhood of what my parents called "Harvard beets," which were beets out of a can (or maybe it was a jar?), and anathema to me, made worse by the fact that I always got yelled at for dropping some on myself and thus staining the clothing permanently :(

I am going to slice the roasted beets and toss them with some navel orange and a vinaigrette made with I dunno maybe shallots and sherry vinegar? And some roasted walnuts? Maybe I should pick up some goat cheese. Ohhh and I have tarragon in the garden!

quincie, Sunday, 2 December 2012 21:22 (eleven years ago) link

yes, good start! you might want to put that mixture on something green to cut its intensity -- any greens will do. not necessary, but this is my preference.

canned beets are gross and they are also the reason why i thought beets were gross until i tried them again at the beginning of this thread!

passion it person (La Lechera), Sunday, 2 December 2012 21:45 (eleven years ago) link

I have some arugula, I will put the beets on that!

Canned beets are uuuugh I don't even want to think of them for fear of gagging :(

quincie, Sunday, 2 December 2012 21:50 (eleven years ago) link

here's a tip -- toast the walnuts in a pan with some butter, brown sugar, salt, and cayenne pepper -- just enough to make a little crust. it will taste v good with the sweetness of the beets.

passion it person (La Lechera), Sunday, 2 December 2012 21:54 (eleven years ago) link

Oh that sounds great and I have all of those things at hand!

quincie, Sunday, 2 December 2012 21:59 (eleven years ago) link

They're really good -- if you don't want to use them all, you can save them for future salads or toss them into some brownies (sounds weird, tastes great.)

passion it person (La Lechera), Sunday, 2 December 2012 22:06 (eleven years ago) link

i got some huge beets today. i have had beet brownies and can confirm they are great.

bought a bunch of beets from the market, will be roasting them imo

do u guys eat them hot? all the talk itt seems to be salad-related?

set the controls for the heart of the sun (VegemiteGrrl), Sunday, 2 December 2012 23:25 (eleven years ago) link

I love them just out of the oven - I always make extras so we have plenty for salads later, but they are so good warm.

Jaq, Sunday, 2 December 2012 23:38 (eleven years ago) link

i like them both ways
any old way except for out of a can basically

roasting is great but most of the time i just grate them & do something with that - fold it into rice or risotto or something. they work better as a taste (& colour!) than as a skewerable constituent part of a meal, for me.

spottieottiespanakopita (schlump), Monday, 3 December 2012 00:12 (eleven years ago) link

i'm going to try them roasted with a horseradish/greek yogurt sauce, on spinach (with grilled chicken)

well, this year, but when the beets start growing again

forensic plumber (harbl), Sunday, 13 January 2019 19:19 (five years ago) link

lately i have been making the ethiopian beet salad very simply -- matchstick sliced raw beets (regular, golden, or mix of both) + raw green beans cut into 1" pieces + either queso fresco/farmer's cheese/a fancy feta (sheep milk for example) with some quality olive oil and salt/pepper. the rest of the dishes i usually make to eat with it are so heavily spiced that it's a nice counterpoint imo.

you could put potatoes into it if you want! small ones (cooked, obvs, probably boiled/cooled?)

i love raw grated beets in a veggie wrap -- press them between paper towel first though or the juice gets everywhere

Have never seen this in the USA but it's standard in French supermarkets, and fabulous. Would you rather have to boil them first to prepare them? Obviously we can buy raw beets as well.

raw grated beets + grated apples + grated cabbage = THE BEST COLESLAW.

oh, will try that tout de suite!

i prefer fresh cooked they taste much better, imho, and i take exception to extra plastic packaging. but cooked, store-bought beets are a pretty good product and a nice convenience in a pinch. xpost

form that slug-like grex (outdoor_miner), Tuesday, 15 January 2019 13:36 (five years ago) link

Euler: tins, the alternate container I cited, hold the juice safely inside for as much of the contents as you don’t use at first. Flappy plastic with scissor-cuts in will spill it throughout the fridge, if it didn’t get all over the counter already.

sans lep (sic), Tuesday, 15 January 2019 14:21 (five years ago) link

oh I see, it's a problem with plastic over metal, ok, I can see that. we just use the whole thing every time but we're a family of five.
