Tuscan style, rub in good olive oil about ten minutes before cooking, and sprinkle with pepper. whack it onto a hot grill for as little time as possible for the doneness (please tell me you won't be charring it dude)

let it rest for ten minutes and squeesze over some lemon juice, maybe a little more best oil and some salt

I haven't done too much with steaks. I think rubbed with olive oil, sprinkled with salt and pepper is the best way to bring out the flavor. And I think a man might appreciate the simple caveman-ness taste. The most important thing is to let it rest for 10 minutes to let the juices redistribute. Then maybe cut into thin slices and fan across garlicky herbed mashed potatoes? That's always nice...

don't salt it before cooking though, it draws out moisture. get the pan wicked hot too.

I was planning on mashed po-tay-toes, certainly. What are your feelings on marinade? (For future reference, not for this meal, which will be simple and tasty).

I never marinate, but I don't know what UK steak is like -- here, since the supermarket selection isn't good, I buy 21 day dry-aged and don't want to cover up the flavor I'm paying extra for. If there were some happy medium between the two, it'd be another story.

The only thing I do other than straight-up cook-it-and-rest-it is steak sandwiches, usually Philly style or chacareros (sliced steak, avocado, steamed green beans, chile sauce).

I don't really marinade steak either, apart from a couple of times with rosemary oil and lemon juice, but I'd leave the lemon til after cooking.

If yr supermarket steak shopping, you canm't get better than the Jamie Oliver stuff in Sainsbury's, it's really really good, but pricey. Otherwise get thee to Borough, on a friday afternoon is good, much less tourist action

I think marinating is fun. I love spicey soy saucey marinades. You just need to make sure to use flavors you enjoy (spices, herbs, etc), an oil (to spread the flavor) and an acid (to break-down/tenderize the meat). Poke holes with a fork, marinade, towel off and broil (you don't want it to be too wet when you broil or else it'll just steam).

my only accompaniments to this steak were a slice of bread & some watercress
