well, the big desert in Thailand is sticky rice and mango, so why not do a risotto with half water/half coconut milk and then add diced mango (or maybe papaya) right at the end.

good call. hmm... i wonder if coconut milk would be a good addition to butternut/kabocha squash risotto.

I wouldn't put it in a savoury risotto I think. I know there's the Thai curry influence but that's taking fusion food a step too far down the blech road.

I've had a sweet risotto conversation before, was it with you Lauren?

also - Brulee or caramel topping, hmmmmm

no, i don't think it was with me. i'd be more than happy to discuss it in the future, though.

i agree that a squash/coconut milk risotto is shaky ground. as the lemon and green apple risottos were savoury, i think my mind is running on that track. i'm tempted to experiment, but some things might be better left alone.
