What I'm struggling to comprehend is that the two methods produce identical knots... this doesn't seem right, but I'm quite tired

I think the reason the knots end up the same is because the only difference is that the loop is formed separately (earlier) for the bunny rather than being formed when pushed through the other lace.
I've been a bunny all my life too; it seems like it's easier to get the loops the same size this way.

I eventually learned the popular method, and can employ it with no problem. But why should I bother, considering it takes me like 20 seconds, when I can do it the other way in half the time?
