i add beets to my vegetable burrito mix. makes everything hot pink and they go perfect w/ jalapeños

So far I have eaten them in salads: one w/ pea shoots, avocado, onion, orange muscat/walnut oil/sriracha dressing over romaine
Other was to add more substance to leftover green papaya salad leftover from last night (added fennel too!)

Both were really good, but I kind of keep expecting them to taste like a mango but then they don't.

For the longest time I thought I hated beets because I didn't realize I had only eaten them pickled (my mother was one of those Year Without a Summer gardeners who would grow bushels of things but then immediately preserve or freeze them). I don't know what made me buy them and cook them - they were probably on sale, because this was in grad school - but it was a total revelation to have them boiled, with fried catfish and "tartar sauce" (just pickled garlic with mayo/sour cream).

three months pass...

I made a salad tonight with three different kinds of beets, so I have dubbed it the SEVERE BEETING salad.

Not the best pic, but you can see the beets:

* golden
* candy striped
* regular

I also added orange bell peppers and it was a psychedelic rainbow salad of my dreams.

they're considerably less sweet than the standard beets

farmer's market

I braised some with a bunch of yellow and purple potatoes, and unfortunately they all kinda bled together :-/

one year passes...

my love for beets has not waned in 6+ years
last night i made a flatbread/pizza thing with

roasted beets
shredded chicken
spinach
gorgonzola
pine nuts
garlic/oo

and it was delicious. just a bunch of stuff from the fridge, but it sat well together.
i feel like at this point it's safe to say that beets and i are bffs 4 life

I just roasted 4 medium-size beets, two red and two golden! I have long had a severe beet aversion related to a childhood of what my parents called "Harvard beets," which were beets out of a can (or maybe it was a jar?), and anathema to me, made worse by the fact that I always got yelled at for dropping some on myself and thus staining the clothing permanently :(

I am going to slice the roasted beets and toss them with some navel orange and a vinaigrette made with I dunno maybe shallots and sherry vinegar? And some roasted walnuts? Maybe I should pick up some goat cheese. Ohhh and I have tarragon in the garden!

yes, good start! you might want to put that mixture on something green to cut its intensity -- any greens will do. not necessary, but this is my preference.

canned beets are gross and they are also the reason why i thought beets were gross until i tried them again at the beginning of this thread!

here's a tip -- toast the walnuts in a pan with some butter, brown sugar, salt, and cayenne pepper -- just enough to make a little crust. it will taste v good with the sweetness of the beets.

They're really good -- if you don't want to use them all, you can save them for future salads or toss them into some brownies (sounds weird, tastes great.)

I love them just out of the oven - I always make extras so we have plenty for salads later, but they are so good warm.

roasting is great but most of the time i just grate them & do something with that - fold it into rice or risotto or something. they work better as a taste (& colour!) than as a skewerable constituent part of a meal, for me.

recent beet revelation: they are awesome in sandwiches! was skeptical when i first noticed this on a menu i was perusing, but then i put some cooked beets, sliced thinly, on a sandwich with stuff - avo, greens, goat gouda, mayo/mustard - and all these things are friends so the combination is really **cking sublime. raw grated beets exude a fair bit of moisture so (on a sando.) the juices end up making it a little soggy, if you're not gonna eat it right away ime.

just looked upthread and wondering what was this Ethiopian beet salad all about? did it have potatoes? a quick google gives recipes that all have potato, which reminds me of a potato salad my evil step mum made that she called "Russian Potato Salad" that was a potato salad that had cubes of cooked beet in it. another killer application
