This is not a pooping challenge but a babyproofing deficiency. You need to babyproof a part of your house where you can leave your baby for a few minutes and if necessary train them to be comfortable there without you. That will allow you to do a lot of things like taking out garbage, dealing with laundry, going to the bathroom and so on. You should probably babyproof your bathroom anyway so you can sit on the can while they play on the floor.

that's what I'm thinking, everything. Even our most babyproof room has a couple faults I'm not comfortable with.

Babyproofing your home is not a goal - it's a series of continual upgrades that involves adopting or discarding various situations pretty much until they move out.
