something that only uses splenda, rather than 'splenda sugar blend' (which is half and half sugar and splenda)

I want to do some baking, but I'm also trying to watch what I eat. But I loooooooooove baked goods.
Anyone got any favorite whole-grainy, healthful cakes or cookies that they can share? I don't really know what I'm looking for so at this point I'll take all comers.

one of my favourite cookie recipes isn't low-cal BUT it is super healthy:
2 tbsp chia seeds1/3 c maple syrup1 tsp vanilla extract
mix together, set aside
1 can black beans, rinsed and drain1/3 c good unsweetened cocoa1/4 tsp salt1/4 tsp cayenne2 tbsp melted unrefined coconut oil
blend in food processor till dough forms, then add syrup mixture and blend again.
fold in:
1/3 c dried tart cherries1/3 c walnutshandful of bittersweet chocolate
spoon onto parchment lined baking sheet, or into muffin liners. bake at 375 for about 20 mins.
i made these for the millionth time last night, and they are so fudgy and good. they don't really hold together, though.

not so worried about low cal per se, just more healthy ingredients - trying to get away from white flour and whatnot

i swear, so good - you absolutely can't taste the beans, even the raw batter is delicious.

aw yay! they are totally my fave bc: - healthy (if you plug the ingredients into a nutritional calc they have ridic amounts of vitamins and minerals)- super easy to make- super quick to make- insanely delish

I switched the method around, and put the beans & the dry ingredients in the food processor, and then mixed the oil, the vanilla, the maple and the chia seeds together, and then slowly poured them into the dry mix, and then fold the nuts, cherries and chocolate in as normal.
they seem to hold together pretty well after baking, fudgy and deeelicious

That looks delicious.
Grain-free pizza crust baked and snarfed here. The recipe uses roasted mashed root veg (yellow sweet potato this time), eggs, tapioca starch. Crispy yet chewy, tastes yeasty even.
