In one closely watched case, Joeā€™s Crab Shack has decided to revert to accepting tips at most of its trial locations, six months after announcing that it would become the nationā€™s first major restaurant chain to test a no-tipping policy at 18 locations.

The casual seafood chain, which is based in Houston and has more than 130 restaurants nationwide, raised its menu prices at the test sites and said it gave higher, fixed wages to its staff. At the time, Ray Blanchette, then the chief executive of its parent company, Ignite Restaurant Group, called tipping ā€œan antiquated model.ā€

But Bob Merritt, the new chief executive, announced in a conference call with investors and analysts last week that the company was cutting back the experiment and that it would continue at just four restaurants, according to Nationā€™s Restaurant News.

Company research had found that 60 percent of the restaurantsā€™ customers disliked the change in tipping, Mr. Merritt said. They wanted to inspire good service with their tips and they didnā€™t trust management to pass on the money to its employees, he said.

OK, can anyone explain this controversy to me? I heard an American on a podcast say "This is terrible: Uber said they were tipping the driver for us, but it turns out that's not true!" If the tip is an automated %, then what's the distinction between the money in this "tip" and the money in the drivers' cut of the fare?

Shouldn't people just care how much money the driver gets from the fare overall?

Are the complainers implying that they knew exactly how much Uber cut the drivers and were calculating that there was extra money on top of that figure?

being tipped is being paid at someone's discretion or seemingly at someone's discretion if there's no hint of discretion it's not a tip it's just a payment

It gives a sense of control to the consumer that makes them believe they have power in the transaction, affirming the validity of a class of worker that is more servant that server, paid at our discretion

when i moved to canada i just started conversations about tipping with some people, and from that arrived at a blanket 20% tip in all service situations as being generous and therefore not making me look like a thrifty brit.

Oy vey. Yes I'd rather not spend ANY money when I get goods or services, but livinginaSOCIETYcostanza.gif.
Actually I feel the exact opposite of her: I'm never going to miss an extra dollar or 2 I tipped someone, whereas the cumulative extra dollar from every customer is going to be a significant amount for a server.

I remember distinctly once while bartending, these douchebros came into my bar in blyn (at the time they were out of place) and the guy stared me right in the eye as he took the round of drinks back to his table without leaving a tip. Like, daring me to say something. This happened every single time he came up to the bar. It was early evening and I was tending by myself so there wasn't much I could do. At least it was just bottle beer.

in my old age, now I seldom have that anxiety, but when I do it's usually me worrying that I fucked up the tip when paying the tab and some bartender is shaking her fist and vowing vengeance when she goes through the night's receipts

Anyway the way to the end of tipping in the USA, already in progress, is through establishments going explicitly tipless and adding service charges. No way is having brave consumers stiff servers out of principle an act of solidarity.
