chips are beyond reproach, roasties & creamy mash are incredible but only occasional treats. otherwise potatoes are no way near as useful, delicious or versatile as onions or toms, they are the wicked idol of the bland-palated sauce-denying ascetic

Cucumber is the only one of these that I'll eat raw, fresh out of the garden. Plus they are handy in raitas and tzatziki. And tabouleh!

Corn was a very close runner-up - not only for it's cob variation, but also for it's ingenious use in such dishes as Fritos.

generously seasoned mashed potatoes, with sour cream and butter are pretty amazing for something so simple to prepare. Irish style mash with cabbage/leeks cooked in milk + butter, rules as well. But onions and tomatoes are so much more important to me.

I'm voting for artichokes. There are a bunch of vegetables on here that are totally essential, extremely versatile ingredients in many different dishes, like tomatoes and onions and various others. These are great vegetables that deserve appreciation.

Artichokes, OTOH, are not versatile or essential, but they are fun and exciting. Artichokes are special event vegetables that can elevate a meal to that next level. I like to think of them as the crab legs of the vegetable world.

Every year during asparagus season, I make certain to eat as much as I can. I never get tired of it, but then I have so little opportunity, since the season is only about two months here. I t was either asparagus or some workhorse vegetable that I eat three to five times a week in some form. I went with the much-adored, but less overexposed choice. But to tell the truth, I have a list of about twenty "favorite" vegetables, so my vote is bound to be a lie of omission.
