iirc (was a long time ago) i used to make lasagna @ a resto. and bechamel was gently layed over the top layer of red sauce. so it wasn't actually in it. and after it cooked it was a creamy layer, but not runny at all. i always thought it was a presentation thing - like the contrast it makes with the sauce just underneath it. and you kind of had to make the bechamel just right - couldn't be too runny or too thick to spread perfectly while at the same time avoiding getting any hint of the red from the sauce underneath mixed in. also seemed to make a pretty rustic dish a little more elegant?

my controversial food opinion is it's ok for people to not like certain foods
it's also ok to not want to try certain foods

brimstead, Friday, 23 March 2018 15:00 (six years ago) link

Yeah, people should eat what they want. I only get annoyed when people prepare food for other people and they totally won't even try it or just are assholes about it. I eat the lasagna with bechamel when people prepare it for me and say "wow, this is amazing."

Yerac, Friday, 23 March 2018 15:19 (six years ago) link

I would eat it too but would hope no one would tell me it's béchamel

it is ok before people to like whatever foods but it is fun to get "mad" about it

droit au butt (Euler), Friday, 23 March 2018 15:29 (six years ago) link

it's fine to not like things or to like things and message board threads are a safe space for comedy outrage but irl if i'm eating something and you tell me how gross the thing i'm eating is i may not say "gtfo you delicate savage" but i will certainly think it v. loudly

"But, you've GOT to try this!" (aggressively shoves a forkful of food at brimstead's mouth)

My mom will prepare a lovely lunch/dinner for us when we visit. And then my dad comes sauntering over and makes his own pastrami sandwich to eat. He's an asshole.

Yerac, Friday, 23 March 2018 15:38 (six years ago) link

people shoving food at my face is a slightly different kind of savagery and whether i like the food or not isn't the issue for me

Cambridge Metallica (Noodle Vague), Friday, 23 March 2018 15:38 (six years ago) link

my dad used to be terrible for this, if i mentioned in conversation having eaten something he didn't like - and there was plenty of stuff he didn't like - he'd insist every bleeding time on a quick monologue about how horrible the thing i'd just mentioned was. in case i'd forgotten the previous 200 times he'd told me he didn't care for curry.

Cambridge Metallica (Noodle Vague), Friday, 23 March 2018 15:40 (six years ago) link

My dad wouldn't eat the grilled salmon and salad my mom made for lunch once. He ate too many salads and he ate too much salmon growing up. Of really dad, grilled salmon was all the rage in 1950s Michigan?

Yerac, Friday, 23 March 2018 15:42 (six years ago) link

Anyway eat what people put in front of you, if possible, is a virtue I've come around to. (I tried with eggplant, it makes me gag, I am not trying again with eggplant.)

valorous wokelord (silby), Friday, 23 March 2018 16:09 (six years ago) link

he's founded a cryptocurrency startup

this actually helps put the olive oil diet in context tbh

the only things I don't eat are mayo, cooked eggs (except in like fried rice) & savory cream sauces. & when I'm traveling I'll even try those. I mean, I once ate a cow's seminal vesicle, how much worse can béchamel be? (actually the seminal vesicle was pretty good)

Someone made me kidneys once because I had not had them before and was interested. They were disgusting. I still ate 5 and had nightmares all night. They ate one because they don't like kidneys.

My partner is a reformed vegan and has slowly been adding some seafood to his diet. The first time he had lobster he spit it out. I ate the chewed up bit. He threw up some abalone in a restaurant. He likes grilled octopus though.

Yerac, Friday, 23 March 2018 16:23 (six years ago) link

Euler how are you in France and not eating mayo. I feel like in France is the only time I eat mayo. Especially when it's freshly prepared.

Yerac, Friday, 23 March 2018 16:24 (six years ago) link

The first time he had lobster he spit it out. I ate the chewed up bit.

man this is true love right here

whether for lobster or yr partner i leave for others to determine

When we go out to restaurants and it's omakase/chef's menus I have to make sure I am extra hungry, because I hate food going to waste and sometimes have to eat double because i'll eat the portions or plates he can't eat. I have a lot of pics me eating huge cheese/charcut boards all by myself.

Yerac, Friday, 23 March 2018 16:29 (six years ago) link

I'm a bit of a traditionalist with italian food and béchamel is good in lasagna, but not necessarily necessary - there are many regional variations and many don't contain béchamel

Louis Jägermeister (jim in vancouver), Friday, 23 March 2018 16:33 (six years ago) link

these dad anecdotes are odd to me as my dad was so serious about not wasting food that he'd eat pieces of steak and side salad that I had partially chewed, gagged, and spit out.

cthulhu original (Sufjan Grafton), Friday, 23 March 2018 16:39 (six years ago) link

and i've gone from curious about béchamel in lasagna to i absolutely must try béchamel in lasagna

cthulhu original (Sufjan Grafton), Friday, 23 March 2018 16:40 (six years ago) link

I am reading all about bechamel in lasagne now and have come to the conclusion that it's best if it's well integrated and subtle. I think a lot of restaurants/markets cheap out on cheese and just slather it in there.

Yerac, Friday, 23 March 2018 16:47 (six years ago) link

I will never allow bechamel to get into my lasagna.

WilliamC, Friday, 23 March 2018 16:52 (six years ago) link

I suspect that many people who think they have never tried bechamel on lasagne have in fact tried bechamel on lasagne.

mfktz (Camaraderie at Arms Length), Friday, 23 March 2018 17:10 (six years ago) link

i’ve only ever made lasagna with bechamel
it’s the way my mum made it & the way i like it best

red sauce + ricotta lasagna just doesnt ever feel as substantial as a good rustic meat sauce + bechamel

and per outdoor miner - the bolognese sauce is thick, and the bechamel is thick, it’s not a soupy mess at all. maybe a ~little~ runny on the first night but once the leftovers set up in the fridge overnight it’s 👌🏻

People who order extra sauce on pizza *shudder*...I think I have issues with too much sauce. I sense a pattern.

Yerac, Friday, 23 March 2018 17:19 (six years ago) link

my partner once ordered extra sauce for everybody's pizza without asking anyone. there was an awkward initial sampling of the pizza wherein I kept wondering aloud why the pizza was so saucy and bad before she finally admitted her crime. she thought it wouldn't be noticeable and was apparently mortified that I kept talking about how saucy the pizza was to everyone.

I agree. I am not a huge fan of potato chips, but I like pringles (and those pickle flavored or balsamic flavored ones).

Yerac, Thursday, 18 October 2018 18:48 (five years ago) link

At a school I was working at this year they had switched to beef sausages because they had some Muslim students, and they were a vast improvement from the cheap bangers they had before, if a bit too salty.

mfktz (Camaraderie at Arms Length), Thursday, 18 October 2018 18:49 (five years ago) link

yeah I can get some Turkish beef sausages but they're not widely popular here. I should say that merguez are easily available in my quartier & we eat them not infrequently but they're more spiced and thus more limited in application.

Australia, for all its British, Irish and Italian heritage really can’t do sausages well. Beef sausages are the staple and not good, bacon, is very much lacking and the Italian sausages seem somewhat dry. Maybe Australian pigs aren’t fat enough.

It's true that Pringles are Not Real Food but they recently had a short lived Brazilian BBQ flavour which erased my willpower the second I tasted it. If it was still available I would weigh 300 lb and live in a pile of non-recyclable silvered cardboard tubes.
