what is wrong w sauce, sauce is good, the more the better. is it because it makes it too gloopy? i had a friend who would order pizzas "well done" because he felt, with some justification, that the middles of most pizzas are too gloopy

I’m on board with extra sauce and have been known to inflict it on others.

if you want pizza sauce just eat spoonfuls of sauce, I've never had a pizza and thought "I wish there were about twice as much pizza sauce on here"

valorous wokelord (silby), Friday, 23 March 2018 18:06 (six years ago) link

"it would be great if instead of sitting between the bread and the cheese, the sauce were oozing out on my fingers"

a few years ago my grandfather lovingly cooked hot dogs for the whole family.

For some weird reason I associate extra sauce with the 1980s. Like, not knowing any better.

Yerac, Friday, 23 March 2018 18:08 (six years ago) link

Ugh, I am in Chile now and the mayo is out of control here.

Yerac, Friday, 23 March 2018 18:09 (six years ago) link

pizzeria uno used to offer "extra oil" for 50c

chilean food is weird. i have a strong affection for it but i hesitate to describe it as good

Louis Jägermeister (jim in vancouver), Friday, 23 March 2018 18:10 (six years ago) link

Roberta's has on every table their bottle of hot oil. It's super good.

Yerac, Friday, 23 March 2018 18:11 (six years ago) link

The food in general in Chile is very average. They don't like spices.

Yerac, Friday, 23 March 2018 18:11 (six years ago) link

It probably depends on how sweet and acidic the pizza sauce is tbh. Ideally, a pizzeria has some idea of the balance between the sweet/sour/dairy and has already chosen the correct proportions for you.

yeah i mean i guess merken and aji chileno appear here and there but yeah, in general quite bland. i like the seafood and the bread i guess

Louis Jägermeister (jim in vancouver), Friday, 23 March 2018 18:12 (six years ago) link

When we have people over, I make everything super basic and put all the spices, herbs on the side.

Yerac, Friday, 23 March 2018 18:14 (six years ago) link

For every bechamel-in-lasagna person, I beg you to try this instead just once.

4T butter, a small onion or a couple of shallots minced fine, 3T flour, 2C milk, 2 egg yolks, 1C grated parmesan cheese.
Soften onions in butter; blend in the flour, then the cheese; whisk in the milk and cook/stir until it's the thickness of heavy cream; temper the beaten yolks with some sauce and add it all back to the pot; cover and cook on very low for 10 minutes.

WilliamC, Friday, 23 March 2018 18:19 (six years ago) link

Your lasagna will be in the oven going OMG THANK YOU before you pull it out.

yeah my limited experience with it was very unimpressive, esp since, like, it's upside down california the food there should be insanely good

gbx, Friday, 23 March 2018 18:38 (six years ago) link

I figure it's because the water is so salty/minerally it's destroyed everyone's tastebuds, that a lot of stuff is just starting to get imported, the milk/cheese situation is stupid and the traditional food is pretty bland.

Yerac, Friday, 23 March 2018 18:46 (six years ago) link

They do put bechamel in their lasagna here too. It's bad.

Yerac, Friday, 23 March 2018 18:46 (six years ago) link

this is a picture of locos mayo which is probably my favourite dish. this looks utterly revolting

Yerac, Friday, 23 March 2018 19:18 (six years ago) link

genuinely the worst looking food i have ever seen my god

gbx, Friday, 23 March 2018 19:23 (six years ago) link

I've never had it when it looked that bad tbh, but almost all the images on google look just about as terrible as that one

Louis Jägermeister (jim in vancouver), Friday, 23 March 2018 19:24 (six years ago) link

Pastel de Choclo is one of the weirdest things I have ever eaten. Who would have thought a mashup between chicken stew and creme brulee would be so awful? (Said no-one ever.)

I was watching an Anthony Bourdain on Chile and he goes to Fuentes Alemana which is supposed to have the most amazing lomito. I ordered it with half mayo because otherwise they put a huge scoop on top. I should've gotten the full mayo because it was seriously very bland. I wonder how many times he has average food and is just too nice to say anything.

Yerac, Friday, 23 March 2018 19:29 (six years ago) link

i love the fuente alemana - well did i suppose as i haven't eaten meat in 5 years - and would usually get the chacarero. i find that the meat you get in chile can be quite bland as well tbh, like bistek a lo pobre is a boring and bad bit of meat with a fried egg on it

Louis Jägermeister (jim in vancouver), Friday, 23 March 2018 19:31 (six years ago) link

I had a conger eel a lo pobre the other day. It was ok. I was at Liguria the other day and got a pernil sandwich ( I only sometimes eat meat when I go out in Chile. It was so gristly and bland I took it home and recut the meat and added more stuff to it.

My dad is from a neighboring country to Chile & he puts mayo on hot dogs too. terrifying.

it really is

marcos, Friday, 23 March 2018 21:00 (six years ago) link

not a fan of chilean food. all the good shit they ripped from peruvian cuisine lol

marcos, Friday, 23 March 2018 21:01 (six years ago) link

I think Korean food is way overpriced for what it is. I think I only like kimchee. All the filipino food I have had has been disgusting.

Yerac, Friday, 23 March 2018 21:01 (six years ago) link

ceviche, lomito, even a goddamn pisco sour is all better in peru

marcos, Friday, 23 March 2018 21:02 (six years ago) link

man i fuckin love korean food

marcos, Friday, 23 March 2018 21:02 (six years ago) link

Someone who was fairly "worldly", half asian/french was telling me about an awesome fried chicken place in Santiago. She took me and I totally trusted her, forgetting that ultimately she was chilean. It was basically bland chicken nuggets served with mayo.

Yerac, Friday, 23 March 2018 21:03 (six years ago) link

the only cuisines I don’t much like are not controversial eg british

droit au butt (Euler), Friday, 23 March 2018 21:03 (six years ago) link

The pisco sour is 10xs better in peru but I like any mix drink with egg whites. I kind of think the ceviche is the same in both, but we make our white fish ceviche a lot and never go for the mariscos mixtos.

Yerac, Friday, 23 March 2018 21:04 (six years ago) link

The empanadas in chile are also dire.

Yerac, Friday, 23 March 2018 21:05 (six years ago) link

!!!

Louis Jägermeister (jim in vancouver), Friday, 23 March 2018 21:05 (six years ago) link

i like empanadas de pino :( also the queso

Louis Jägermeister (jim in vancouver), Friday, 23 March 2018 21:06 (six years ago) link

They are basic. The empanadas in Peru and Argentina are much better.

Yerac, Friday, 23 March 2018 21:06 (six years ago) link

probably I’m the only one on ilx who has opinions about bolivian food

I like it

droit au butt (Euler), Friday, 23 March 2018 21:07 (six years ago) link

Oh, is that where your dad is from? The last time I tried to go to Bolivia there was a surprise visa that I didn't know about so we just went to the atacama instead.

Yerac, Friday, 23 March 2018 21:09 (six years ago) link

Korean noodle and rice dishes all kind of suck. The only thing fun is doing the barbecue.

british food doesn't exist either
